5 Ingredient Vegan Pancakes:
5 ingredient Vegan Pancakes topped with Organic maple Syrup or light Agave Nectar, fresh bananas, fresh raspberries, strawberries and blueberries as well as chia seeds, ground flax and coconut flakes. This recipe is: refined sugar free, dairy-free, egg-free, wheat-free, no added fat, vegan.
1.5 cups of oat flour. (You can take quick oats and blend them in a blender until they have flour consistency).
1 cup of unsweetened almond milk or other plant-based milk.
1 RIPE banana.
1-2 Scoops of Vegan Protein Powder (I have tried a few different ones and the Orgain brand tastes great and doesn’t upset my stomach)
After you have made your oat flour, add the banana, the chia seeds, ground flax and milk to the blender and pulse for a few seconds until smooth. The batter should be fairly thick but still pourable. (You could also use coconut flour which is another healthy option).
Then you take out a frying pan or griddle and grease it with coconut oil. Take a paper towel to wipe off excess oil. Cook on low setting and let them slowly brown.
Once your pancakes are ready to be plated add more bananas if you like and berries and sprinkle shredded coconut over your pancakes. Top off with maple syrup or Agave nectar and you are ready to eat.
