Hey pretty Mama,
As a busy mom myself I know that time is of the essence when it comes to cooking, prepping, meal planning and ultimately eating clean and living a healthy lifestyle whilst working, running errands and taking care of your family. That’s why today for all you busy mamas out there I have decided to post one of my favorite recipes. A friend and fellow fitness enthusiast was making these and raving about how good they were.
So if you are not getting enough protein in your diet, or you are wanting to snack on something, rather then grabbing something high in sugar and fat, processed, these home-made Egg White Protein Bombs are not only easy to make, but totally satisfying and yummy. Even your kids and hubby will approve. They are great to bring with you to the office, before hitting the gym, or even as a late night snack if you get the munchies.
Egg White Protein Bombs
You will need 2-12 count muffin pans.
Egg white liquid (large) or 2 small cartons
1lbs Ground chicken/turkey/lean beef
1/2 white onion chopped
Coconut or Olive oil
Unsweetened Tomato Sauce
Italian seasoning (optional)
Steamed vegetables of choice like broccoli/cauliflower/peppers
How to prepare:
Put oil in your pan just enough to brown your chopped onions and garlic. Once onion is soft add your meat of choice until browned. Add seasoning of choice, try not to salt your food if you can help it. If you like Mrs Dash you can use that. Then add your plain tomato sauce and mix it well with your meat.
Turn your oven on to 350 degrees.
Take your muffin pans, spray them with Pam so nothing will stick and start filling 1/3 with your meat mix. Then add your already steamed veggies leaving room for egg white liquid. The egg white liquid should almost go to the top.
Place in the oven for about 20 minutes. Watch them as they bake. Then take them out let them cool before putting them into Tupperware and into your fridge. Bon appetit. Don’t be afraid to get creative in the kitchen if you like other vegetables add those instead, have fun cooking, enjoy eating these and you can even bring those as a healthy option appetizer.
